I am not a math wizard. In order to save some brain overload, the following table breaks down amounts for recipes that call for measures less than a cup of buttermilk.
Homemade Buttermilk Table measurements for amounts less than one cup:
Amount of Buttermilk | Amount Lemon and/or Lime Juice, Vinegar, or Pickle Juice |
1/4 cup | 3/4 teaspoon |
1/3 cup | 1 teaspoon |
1/2 cup | 1 1/2 teaspoons |
2/3 cup | 2 teaspoons |
3/4 cup | 2 1/2 teaspoons |
If using the above table, just remember to add the acid first and then add milk to bring the liquid measure to the desired amount (eg. – don’t measure out a 1/4 cup of milk and add an additional 3/4 teaspoon,)

Ingredients
- 2 tablespoons vinegar
- 1 cup whole milk
Instructions
- In a glass (or plastic) measuring cup, add vinegar.
- Add milk to bring liquid to measure 1 cup.
- Whisk mixture and let sit, undisturbed for 10 minutes.
- Whisk once again and use.
