Notes on Apple Bundt Cake with Cinnamon Icing:
- I tend toward being heavy handed concerning cinnamon. Increase or decrease the amount of cinnamon to suit your tastes.
- I used fuji apples. Alternatively, you could use granny smith, Braeburn, and Honeycrisp apples are all great choices.
- As noted above, this dessert will please a crowd even without the cinnamon icing. It does add to the presentation if you are looking for something to surprise your guests.

Apple Bundt Cake
Ingredients
- 3 cups all-purpose flour
- 2 cups sugar
- 3 teaspoon baking powder
- 4 eggs
- 1 cup olive oil
- 2 1/2 teaspoons vanilla extract
- 1/2 cup orange juice
- 1 tablespoon cinnamon
- 5 tablespoons sugar
- 5 to 6 apples - peeled, cored, and chopped
Instructions
- Preheat oven to 350° Fahrenheit.
- Grease and flour a 10 cup tube pan.
- Peel, core, and chop apples.
- Combine cinnamon and 5 tablespoons of sugar.
- Toss apples in cinnamon/sugar mixture.
- Sift all-purpose flour, 2 cups sugar, and baking powder together.
- Mix the oil, vanilla, and orange juice.
- Beat in the eggs just until combined.
- Mix the egg/oil mixture into the dry ingredients (do not overmix).
- Layer batter alternately with apple mixture.
- Bake 65 to 70 minutes.
- Let cake cool in pan for 60 minutes before removing from pan.
